Today I went to one of my favourite Curry houses in Glasgow - "The Wee Curry Shop" on Byres Road and ordered a Garlic Chile Chicken. Well this is some serious garlic - a full large bulb of Garlic in the one single serving as well as about a hundred chopped green chiles  ;D

I thought they wouldnt let me back in the office after that bad boy  :o ;D

Heck no... Most BIRs need to be able to get things out quickly. Traditional dishes can simmer for upto an hour to get the spices right and the meat tender.

Check out "50 Great Curries of India" - This is regional and most of the dishes take time because you are cooking off your onion, garlic, ginger, meat etc from scratch. It is a great book though. This is where I get a lot of my ideas from - and then convert recipes into BIR style

There is absolutely no point in arguing subjectiveness... To sum up -- I went into a Indian restaurant in Glasgow my mate swears as being the Curry in Glasgow and he lives out the place - I tried it - then tried it again just to be sure and the curry was one of the worst currys I have ever eat in my life (both times) - The taste and consistancy was just not what I like at all - but to him it obviously is.

The only thing I trust in this life in regards to food and cooking is my own taste buds.  ;)

N.B. we don't do bubbles down 'ere, we likes a full pint, ooohhh aaaarrhhh :)

You arent being served in the right glasses then... All the proper ale pubs up here sell pints in glasses where the pint line is clearly marked lower than the top of the glass allowing space for a free head :)
