Hi

There may be a chance that reclaimed oil adds something to a curry but i am not a believer.

It CANNOT be the missing ingredient because as we have seen from micks videos, chewy videos, etc the restaurants they use do not use reclaimed oil.  Other takeaways may use it but as there are some who do, some who don't, both producing very good curries I assume (from micks feedback), then this cannot be the missing ingredient.  Possibly only an improvement for some people which may be what their t/a uses!

Hi

I have all the recipes I fancy in my untried curries folder in a format similar to CA's recipes.  I have all the tried and tested curries, starters etc in my best recipes section laid out like a menu.  I then have my finished recipes i.e. the recipes I am 100% happy with, in a laminated ring binder so dont get curry splashes as I found I would be printing them out all the time then throwing out the paper.

George - Are you ex CIA or just paranoid??  I dont think google or anyone else is going to be too interested in what curries people are eating.

this site is really frustrating me at the moment.....too much going on and not enough time in the day to try everything :)

good job.  will give this a try when current base runs out.  finally give the slow cooker a good run!!!

i also add a tsp panch poran  it is essential you have them on a slow simmer to stop the starch molecules breaking down and the potatoes going mushy.

I am exactly the same as you.  I just know if I felt like I was being forced to cook, I would stop enjoying it!

Imagine doing a 10 hr shift and sending out the last meal and some drunken idiot says your food is crap!!!  Not worth the hassle!
