hi CH the dried crushed red chillies are what he means, thats just what i would take it as. they are hot on their own. will make this as an alternative to my usual vindaloo and return with feedback, quite looking forward to it actually as my vindaloo are on the hotter side of "curryhell" LOL

Lets Talk Curry / Re: Aluminum Pans and changing taste
September 16, 2011, 08:32 PM
hi loveitspicy actually the best pan for the job and used by most indian restaurants would be made of black steel, it has the ring i associate with BIR cooking having been into many kitchens and had demos , granted they did have both types of pns and non stick mishapen  woks aswell! lol but they are better in my opinion  and retain the heat very well. have you not seen cbms' blogspot? most of those videos have the chef using a black steel pan, the only down side is the treatment of them as they will rust if not washed and dried completely and then oiled. and they are very cheap too i paid 5.99gbp for mine Rajver got it from a shop just off brick lane called ghandi. most of all i love using it and you woukd tooooooo!

kind regards

Pictures of Your Curries / Re: My new tandoor/napoori
September 11, 2011, 04:53 PM
so george if thats right what you are saying, are we to disbelieve the laser point and read thermometers aswell then as they don't actually touch or go anywhere near the ovens. check out Heston blumenthals "in search of perfection" his perfect chicken tikka masala episode when he goes in to an indian kitchen stands on the other side of the kitchen points his thermometer at the top of the tandoor actually just inside it and that reads 480C. and that is the temperature he was looking for when he made his own charcoal burning tandoor! in the car park of the fat duck!
and yes you can reach this temperature on a charcoal bbq if you have a lidded barby.

hi guys something like this happened in the early days so another link was set up to carry on the chatting, i didn't get involved in that as i was relatively new so had more than enough printouts to keep me going.

i am happy to exchange e-mail addresses. maybe there is another way?
