I've never made any Indian sweets, much to the chagrin of 'im indoors ::) to be honest, I've never thought I could make them as good as the ones I can buy from the multitude of Indian grocers we have around here, not to mention the fact that when he lived with his parents, an Indian woman down the road from him used to spoil him with her home cooking :o

I've been thinking of having a go though, can you recommend any recipes?  :)

Oh...SnS :o of course they do ::) but since he crosses the border into Lancashire, they don't much care ;D He once burnt half of Accrington down, decimnated half the town and only caused ?13.47's worth of damage :o (apologies to anyone from Accrington, I'm only joking....the final bill was ?3 less :P )

I was so tempted to say something about enjoying the cream of sum yung gai...but I really don't think this is the place for it ::) :D

pmsl I got exactly the same treatment when I joined up there too..but I got stick on their open forum...all because I said his recipe was crap - which it is ;D (which was posted at this board, funny how they slate this forum but yet can't seem to stay away from it!) ::) apparently freedom of speech on that site stops when it comes to any reasonable negative criticism of their admin or his *cough* "ten years experience". As you may recall, they upped and left because members here had the nerve to press him on exactly what experience he actually had (since it wasn't exactly apparent based solely on the quality of his recipes) :-\

Don't forget CC is a Canadian.....he wouldn't know BIR if it bit his arse off..unless he jaunts over here weekly for a drop of ruby, his opinions on BIR recipes should be ignored..just my humble opinion, of course ;)

Bugger 'em I say ;D This place is far better and as you pointed out, no-one is trying to charge you good money for recipes/techniques which are only as good as the post they appear in because two posts later (after fairly mild criticism) the recipes get changed ::)

?15 for a friggin' e-book? Don't make me larf! especially when one of the authors didn't know what a pathia was or where it originated 2 years ago despite having the now much advertised "Ten Years Experience"TM :P You know what they say about a fool and their money :-X

Do you have any curry-making rituals? Is there any particular spice or ingredient which you feel your curries absolutely must have - even though they're not listed in the original recipe?

I don't mean when you first follow a recipe, because to me to judge any recipe properly you must cook it as the author dictates, I mean when you go off experimenting on your own, what are your essential ingredients/methods of cooking them which you swear make a difference in taste.

So what do you swear by?

When you're not cooking curries? Do you like to cook any other foods?

I've noticed that most of the members here are men.....are curries and barbeques the last bastions of manliness culinary-wise? I mean, my hubby loves anything that involves big flames, but looks at me like I'm demented when I ask why he doesn't cook a victoria sponge ??? ;D

Or is that just a Yorkshire thing too? :-\ :P

I hope it is just a time management thing and that he'll be back....he's a fantastic member and a great staffer and it's always a loss to any forum when such a prolific poster and well-liked staffer/member goes :(

Adding a little salt to your chopped onion will also cut down on the bitterness as it releases the natural sugars.

Does your wife think northern curries are better than southern curries? :)
