Curry Videos / Re: CBM Little India Base Gravy

Brilliant work and thank you again!

The 3rd stage reminds me of abdulmohed's enhance gravy, which i really must try this coming weekend.
It's also interesting to note how much water is in the pot.
I've been reading Julian's new E-book, (as many of us have) where the emphasis is on how little water you really  need to cook the onions properly.
Also the use of any spiced oil.?.? -again, as we can see in the video above, these things just aren't happening.
@Curry Barking Mad,i take it you've eaten at  Little India, what's the food like?
It certainly looks the business
Once again, thanks for all your videos and Keep'em coming. ;D

Hi chef888.
Keep'em as wet as you possibly can-'sticky'.
I know it's not always that easy to knead wet dough, but i find the wetter you keep them, the less they dry out during the cooking stage.
I use a tawa to cook mine- roughly 1 minute  on each side is more than enough on a gas hob.

Hope this helps.

Lets Talk Curry / Re: curry2go book

There seems to be a couple of threads on the same topic here,so which to post in?
Anyway..
Five and a half hours later .....finished.
It's clear after a couple of chapters the amount of hard work that's gone into this book and indeed the accompanying  videos.
It's clear, concise and informative and well worth the asking price.
I'm generally excited about new ideas learnt, and eager to try them out.
Need to do some shopping first and hopefully give it a crack over the Easter holidays.
Well done Julian!
