Gonna give this a try. Quite a good surprise to find not just a recipe, but one which seems to be worth a go. Just when I was thinking this place was just for arguments :thumbsup:

Question:

"Cover and leave in fridge for 4 hours (or overnight if time permits), divide, roll lightly in sr flour and shape into balls.

Flatten using hands or rolling pin, flatten and shape further by passing from one hand to the other (think how pizzas are made) and put on gaddi."

Is there a particular time gap to keep in mind between taking the dough out of the fridge and cooking the naan? I mean do you make the balls and leave them to warm up or rise first?

Tried this - didn't really work. The double coating thing is what I mean. Coated, dipped into chilled water and most of the coating fell straight off! Anyone got tips on building up a nice thick crumbly coating as shown in the link because dunking into water doesn't seem to be the thing.

But grinding cornflakes into powder and adding with the flour and spices made a super amazing good tasty coating so there is a tip for you. Ratio about 1 part cornflakes to 3 parts flour.

Hi sp. Really interesting thanks. I wonder why the oil is added, it's not gonna fry anything with so much water already in the pot. Or is it just to flavour the oil so it can be used in currie?

Hi sp, is any of this fried before topping up with water and boiling? Or is it raw onions, spices, etc boiled with the meat in water?

I bought Mick Crawford's book 1 and found the spicing to be a little under what I'd normally use. But I was measuring out level teaspoonfuls like he says in the book. If you're adding heaped tsps I can see how you might think the recipes was over spiced.

Has anyone made their own paneer? How did you get on? How easy and how good was deh results?

Reduce the excess cooking liquid down till it's concentrated and put it into your next batch of base as stock
