Another question would be:- What is the minimum amount of oil that's needed to absorb all the essences from the spices? Or is the goal to emulsify the largest quantity of oil.

I do like a mixture of red and brown onions for traditional cooking, but for a base I use whatever is cheapest down my local Turkish shop, usually a couple of quid for 5kg. The price of red onions at the moment doesn't inspire to use them in a base.

A couple of places around gare du nord do those mutton rolls and they are fantastic!

I've been inspired to try this base, so at least I can compare it with my normal method. I meant to comment yesterday but got sucked into reading the 30-odd pages of 'Madras 2011' after that my head hurt.

Any ideas for a decent Dopiaza using a standard method of cooking?

The best places are around Gare do Nord or just in front of Metro stop - La Chapelle - Line 2.

Ah. You'll likely find it difficult to find much in the way of spices outside the main towns and even then the choice is very limited. Luckily I live in Paris which is about the only place with a sizable Asian (Tamil) community, and hence has a large choice. If you need any help getting stuff, send me a mail.

Just like to say also what a pleasure it's been to see some of the various stuff being made, it's good for everyone's cooking to get pushed into something unexpected. Some real food for thought, even from contributions from people not doing the tests.

I'm certainly in for the next round. It would certainly be a good idea to ask admin to put something on the front page as there seem to have been a few people who missed out that would have liked to have been involved. Nice to see a real pleasant thread for a change.
