I've just bought two new aluminium frying pans after years of using hard anodised i believe that a lot off curry chefs etc use this type of pan! The trouble is that I've been finding thin pieces of aluminium strips in my curry they are obviously coming from the pans and as from now I've stopped using them! I presume most of you are using aluminium pans like mine I'm fully aware that aluminium is very soft I wonder if there is a different grade of aluminium that should be used for making cooking pans! Has any one else spotted this I know these pans are often used in curry houses!  Anyone any advice!

I hadn't thought of that Phil, but it is a good point. It would be worth seeing if there are any replacement papers available. I'm not even sure whether it would be possible to make some. They would help to keep any moisture out as well I guess, as I have found that certain spices just absorb  it when you open them, Chinese 5 spice seems to be the worst. I did buy them in bulk and then used the card inserts to divide them in the drawer, but I threw the paper out ::)

Bob, the drawers do lift out but they have a good extension on them so you can pull them out all the way. I guess you could just make a drawer that fits your plastic containers.

Yes that's a good idea many thanks SoberRat.

I see you're using the Kilner version; do you keep and use the checked paper tops, or do you jettison them and rely solely on the rubber O-ring ?

** Phil.

Them kilner jars look the business and I can tell that the drawers will lift out if need be
I like to take my spices over to the work surface really impressed with your system

May be worth mentioning that evaporated milk is not the same as condensed milk.  In British English,  the former is unsweetened, the latter almost invariably sweetened.  Carnation is sold in the UK as condensed milk.

I agree they are not the same

Evaporated milk and sweetened condensed milk cannot be used interchangeably in cooking, because one product contains much more sugar than the other. Since sugar in sweetened condensed milk is cooked down and caramelized.
