Hence my reply to another thread that any Professfional chef who is proud of their cooking will be happy to show you what they do. Only the dirty ones keep people out of the kitchens!

I did a smaller batch last night and saved a little at various stages to see what comes out the best. In terms of smell it was one of the earlier samples.
I will try them over the coming days and see how they all compare.
I think that getting this bit right will help me a lot in getting closer to the taste that I like!

Thanks Andy!!! ;D

Exactly Spicy!

There was a program on Radio 4 about 2 years ago where they spent an hour talking to the guy that started it. Originally he went to India to find out what beers they had there and then started modifying the process until he got what he liked.

When it first appeared here they GAVE it to the restaurants for free!! This was just to get customer reactions. The rest is history and the stuff is now made in the UK. :(

I have a couple of Var recipes somewhere but they are not hot but very pungent.

Hey CP,

Any chance you could dig them out and post them? Sounds like the sort of thing I would like to try.  :D :D :D :D :D

CA,

Never seen it in the supermarkets, it's not that popular t othe masses..... But as YF says, try the local 'indian' shops. Note though that they often will stock only one brand so you may have to shop around. For example the ones areound here vary. Some have East end spices, come have Rajah, some have TRS etc...

Really suprised that it isn't on the web site. I bought a jar about 2 weeks ago....

I did wonder!

I will be trying a smaller batch again this week and won't ramp up to the full size again until I have it right...
