Personally, I don't add the final amount of water. I find the consistency and taste pretty much spot on without the additional water. However, it is worth following the recipe exactly, given it's the first time you have cooked it.

I also had this issue, where the tomato mixture didn't look as thick as the one pictured in the OP - mine came out fine though.

Very much along the lines of what I was thinking. Until I've cracked the humble Madras (and similar BIR staples) I wouldn't want to move onto 'House Specials'.

I've made the madras from this book and it produces a reasonable curry, although I didn't use his base. Much better recipes can be had on this site, I reckon.

What about lorrydoo's (https://curry-recipes.co.uk/curry/index.php?topic=1823.0)?

I've not tried it myself and I am not sure if the base is essential to the recipe (or whether you can use any other base), but it might be worth a go.
