I find that when using an ali pan that you need to use a lot less heat as they're a very good conductor of heat, re the spoon action try using the bottom of it rather than the side, hope this helps.

Once I find a good local T/A I tend to stick to it. When new places get rave reviews and they turn out to be pants I wonder it the reviews are from the owner's friends and family.

If a recipe says use a mix power then use one, there's a lot on here, maybe try Bruce Edwards one as that seem to be very popular.

It certainly is. CT's madras was not only the worst madras I've ever made it also ranked close to the worst curry I've ever made. If I ever find some MDH kashmiri powder I intend to make it again to see if this brand really does make all the difference.
