Lets Talk Curry / Re: How much Oil ?
March 09, 2009, 10:48 AM
during a demo at my local bir ta, i noticed they put in around 7 - 9 tbs of oil. the whole of the frying pan is covered in a generous amount of oil. interestingly they dont add much oil to there base though. although its unhealthy, i recomend endorsing this approach. the curries are much better when lots of oil is added to the pan. how unhealthy is veg oil in this quantity? i would be interested to know as i am doing this 5 times a week !! no wonder the wasteline is growing

Lets Talk Curry / Re: Using green chilies for that special flavour

Hi CQ, whats an easy way to start reclaiming oil, it sounds like the way ahead. do you just put a lot more oil in the final curry, and skim off some at the end. i am not keen on adding lots of oil to my base, as i like to keep it semi healthy. so am looking for an alternative, quick simple method to reclaim oil. cheer DD

the ashoka lamb bhuna is one of my favs this past 2 months. but sweet sour dansak is my current fav this month. next month i want to crack the local ta's madras, its stunningly good. i am getting nearer each month. if i could replicate that, i would be chuffed to bits
