The missus wanted me to try a Korma with this base so I made one last night first attempt at a Korma she gave me 10/10 and said it was EXACTLY as our regular BIR or TA. This curry and the Jalfrezi are the two best curries I have made by a mile using this recipe and reduction technique. Also thanks to CA as i used his ingredients for the Korma onto the CTM tonight.

Curry Base Chat / Re: Commercial Base Recipes?

I have tried most of the Mr Huda selection when I first signed up on here made some awesome Jalfrezi's with the universal paste and tikka paste. The base recipe is simple and quick with hardly any spices due to the fact most are in the paste. The nice bit of oil you get inside the jar seems to me the best part of using these pastes. Try the mint sauce recipe the best I have ever made out of about 15 different recipes I have tried.

I made the joshallen Jalfrezi version it was the best I have made so far. I have tried this reduction method before and prefer it and make better curries this way.
Onto a Pathia version now!!!

Yes I mean a sweet tin. I do normally always store the base sauce in a plastic container but as the missus volunteered to tidy the kitchen she used this tin container.
I wont be using it again just making sure it's OK to store it like this as a one off?
Cheers

I made a base at the weekend and the missus tidied up and put the remainder of the sauce in a Celebrations tin container. Is this OK to store base sauce in the freezer in this type of container?
Thanks

Hello mate,
I live in Swindon and my usual place is Jack Spice in the town centre near The Sir Daniels pub. Excellent food and service with friendly staff. I haven't been down there since before Christmas but last time I went they were doing a special Sunday-Thursday 4 courses plus poppadoms for ?9.99 !!!  Last time I had it I asked for the side dish to be boxed so I could take it home as I couldn't move.
If you go there try the Chicken Chaat starter it's top drawer.
