Hi Pugs.
The only reason I said that was I was thinking of clogging up arteries !  Nothing more.    I also would prefer to use more butter ghee but scared the ol ticker might suffer ! 
But putting some in at the end for end flavour and gloss is my 'healthy' compromise...

Ahh, yes it is rather dodgy for the old ticker.

Lets Talk Curry / Frying dried spices

So, I'm new here and learning the ins and outs of BIR style curries. I usually cook traditional curries with recipes from books.

I have a question regarding adding dried spice mixes whilst frying. Do people not add water to the mix to turn it into a thick paste which prevents the spices of possibly burning and regulating the temperature by adding water if required or is that 'old school' nowadays?

Isn't the paprika used in Indian food not sweet, smoked or hungarian but the variety used and now grown in India (sure somewhere I read it was neither of the 3 above), thats how I understood it and hence will only use 'India' paprika

What stage can you freeze this before or after adding the Tarka?

So, having read the past 38 threads a wee bit of conflicting amounts. Can we have a defintive quantity checklist for HOME amounts if possible please?
