Its obvious once you think about it the salt quickly caramelises and creates that missing BIR ingredient taste that we have all been looking for - No no! I cannot see any rationale there either.

Welcome aboard Sharpy it's a great ship hope you can offer up some more tips - plenty of good stuff on here that could help you as well. By the way I must ask a question that has been niggling me for ages did you ever see tins of tomato soup being used by any of the chefs?

Now knowing Mrs coogan and her little peculiarities I am not sure if it was the actual tikka masala dishes that caused the strange reaction or the thought of possibly participating in a group test!!!

Thanks for that Coogan.  I haven't come across that one.  I take it it's one of those packet mixes that can be found in asian grocer stores like chaat masalla? 

Yes it comes in a little box normally right along side the chaat masala - same packaging. I find it gives a more lemony taste then the chaat particuarly good for a chana bhaji I find.

Very nice Ray. I would agree you could call it a 'modern' version - a sort of balti rogan josh I would say. Similar ingredients to mine really just different variables. I will definitely give it a whirl but will probably use black cardamoms rather then green for the more pronounced earthiness.

Perhaps Curryhell they use a teaspoon or two of Chana Masala spice mix for that sour taste I use it a lot when I make a chickpea dish.

Very timely post indeed, as I am/have been working on a Rogan Josh recipe myself. I have settled on a recipe the gives me the taste and the look but I can't really describe it as an 'Old School Rogan Josh' very tasty nonetheless. Your version I would describe as the 'Super deluxe model' whereas mine is a 'modern' Rogan Josh. I am definitely going to give yours a go because I am very interested in the final taste in comparison to mine.  I do know, that mine almost tastes identical to my local TA's Rogan Josh and looks the same thanks to the addition of some red food colouring.

Hello Ray thank you for your kind words mate. I had one last night out of the freezer and it was still superb and I would say very 'old school' in taste very rich. Mrs Coogan reckoned it was definitely the dogs gonads. I hope you do try the recipe out I reckon it would go very nice with chicken tikka equally as well. I would be very interested to have a look at your recipe and compare notes.
