Hello Tim,

I'm fairly new to the forum.
Like your good self, I too was using recipe books, but always with that little something missing.

I'm a Madras fellow myself, & I can honestly say, thanks to this very knowledgable lot on here, I am now eating some of the best curries, & side dishes I have for years.

Had curry for my tea 4 times last week.LOL

I might give your curry a go with CA's base mix Razor.

Then again, I might have another go at this base mix, & ease back on the garlic.

What ever, I would never criticise you personally sir. I appreciate all the help you give.

Well,

To be totally honest, I much prefer CA's base mix, much more to my taste.

This sauce for me personally, has too much garlic in it. Maybe for me, I should leave out some of the garlic.

Hello Razor,

I've just had a go at this base mix this morning before leaving for work.

Cooked the onions for a good 45mins.

It's now in the slow cooker, & will remain there untill around 6pm tonight.

Hopefuly I will get some pictures posted on Friday.

Would love your recipe for chicken curry please mate.

Kinda makes things a little clearer now.

Another question if you could be so kind please.

In some recipes it's said to add "sweet Paprika"
Having looked in my local Asian supermarket, I seem only to be able to get a hold of "Paprika"

Is there a difference?

Had a go at CA's Madras on Saturday.

Used his base mix, & his spice mix.

I just cannot believe the end result.
For years I have been messing with cook books, & although it's been ok.
It's always had that something missing.

Saturday, I was over the moon. I would have gladly paid for the curry I produced.

Hello CA,

Cooked these on Saturday.

They were the absolute dog's gonads.

Sorry I haven't got any pics, they just didn't last long enough.

Just as good as any I have ever bought.

Had my butcher mince a fillet of Lamb yesterday.

Followed the recipe, &  filled a pastry cutter with the spiced mince.

I use this  to make perfect beefburger shapes.

I then rubbed them with oil, & fried them on a griddle pan.

Testers.....Myself, My son, & his friend.

Verdict...Best Kebabs we have ever had.
