Hi folks

Any Hints, tips or methods for flavouring/spicing chapattis?

Probably going to have a go at making some on my new Tawa this weekend, as a change from naans, but fancy something other than plain ones.

Just an update on these.

I decided to order from them in the end as the pans were on offer, so ordered (to make the most of the single postage charge) -

26cm Alumininum Omelette Pan 
30cm Tawa 
7.5" S/S Gratin Dish with lid
10" & 12"S/S Serving/chefs Spoons
4oz Stainless Steel Ladle

All for just over ?29 with vat and delivery.

ordered on 22nd and surprisingly arrived today, which is very good considering the Easter weekend.

So very pleased indeed.

Only slight downside was the unexpected delivery today, they said they would e-mail the shipping and tracking details but didn't. Luckily I was home.

I also add it to all my spicier curries, but not in any of the mild creamy ones (CTM, Korma etc.)

Hi Chris

I haven't tried it with the grated carrot, I just used the original recipe (first post).

Oh and I didn't have Fennel seeds, so I added about a quarter tsp of cumin seeds, and I now add a couple of those Indian Bay leaves too. ;)


I have frozen some, but haven't tried it yet, so can't really help there.
Can't see it being soggy though, as after it has been in the oven for a while it becomes quite dryish and nicely separated (as it is in the restaurants here).

This is what I always cook, and always goes down well.

Chicken Jalfrezi
Ingredients: for a good double portion

2 portions of pre-cooked chicken
3 tablespoons of oil
1 tablespoon of garlic paste + 1 teaspoon ginger paste
1/2 large (1 small) onion, sliced into thin strips
1/2 medium red pepper, sliced into thin strips
2 or 3 whole green chillies thinly sliced (to taste depending on chillies)
1 tablespoons of tomato paste mixed with 3 tablespoons passata (plain no herbs garlic added) *
1 tablespoon of mix powder
1 teaspoon all purpose seasoning
1 teaspoon of chilli powder (or more to taste)
1 tablespoon of dried methi
2 tablespoons fresh coriander, chopped
370 - 400ml  base gravy
1 heaped teaspoon onion paste
1/2 teaspoon brown sugar (or more to taste)
1 tablespoon lemon juice
1/2 large tomato, cut into 4 wedges

Method:

Pre-cook onion and pepper, stir fry in a little oil for about 30 secs, and set aside,

Preheat a pan to a medium heat and then add the oil.

Add the garlic/ginger paste and cook for about 30 secs

Add the pre-cooked onion and pepper, cook for about 30 seconds.

Add the green chillies, tomato paste mix, chilli powder, mix powder, dried methi, all purpose seasoning  and 1 tablespoon of chopped coriander.

Add about half of the base gravy then and add the chicken. Stir and cook for a few minutes, until chicken is heated through.

Add the remaining gravy, onion paste, lemon and sugar stir in, then add the tomato. Allow to cook for a few more minutes, until desired sauce thickness is achieved. Stir and serve with remaining coriander sprinkled on top.


* or 2 tablespoons tomato paste mixed with 2 tablespoons water

Edit - I see they also sell various large spoons, Tawas and Karahis/Balti dishes etc. for reasonable prices.
So if you need a few of these items it makes the 5.95 postage well worthwhile.

If anyone needs 2 then they have a bogof offer here for 26cm pans.
