Here is my recipe for my Thai green chicken curry, you simply place all your ingredients below into a non stick pan and simmer for around 40 minutes.

2 X tbs  green curry paste from a jar

300 ml of water

1x piece of cassia bark

1x lemon grass stalk fresh

4 x large lime leaves

2 x star anaise

6-8 fresh curry leaves

2x tbs of crispy fried onions

1x tsp dried garlic flakes

Hi Mattie Yes no problem you will need to get your hands on some lime leaves not the dried ones though you may not find fresh ones due to import regulations however frozen ones can be found in Chinesse supermarkets! Give me a day or to I will post my recipe on here

Regarding The scoring part I usually ask the butcher to do this I have some very sharp knifes but I still struggle to make any impact on the pork fat I've even used razor blades but I always seem to struggle! I then rub olive oil and rub in sea salt but I very rarely get good results on the finished cracklings  Unlike my late mother & and mother in law.

That's a good perc of the job Mike free bread especially the sourdough! Your recipe for bread is very similar to mine! Will try and get the wife a job at a bakery lol
