I'll second that - big thanks to 976 for his effort in sharing bulk recipes. It's nice to get details of large scale cooking from someone who has genuine credibility instead of the usual narcissists on here.

Please don't feel discouraged. You know, people here are mostly very friendly and willing to help , but like all long running forums there can be a kind of "compassion fatigue" which sets in after the first 10,000 or so new member introduction posts, which leads to the forum regulars not always replying to, or even reading the "new member introductions board". I know I'm guilty of that so I can't judge others who didn't reply to your questions.

My top tip would be to post your questions in the dedicated boards of the site and ignore troublemakers who may have replied to this thread looking to stir up problems. Welcome once again and I hope you stick around and become a regular member.

Hi Jigs and welcome.

A diy home build tandoor is something of a dream of mine too, and your experience sounds pretty valuable. Do you think yours cracked because water got into the insulation layer?  I've read that water can cause thermal stress because it prevents the outside of the inner pot expanding as much As the inside of that pot, leading to cracks. Not sure how a tandoor stored outside can avoid having moisture in it though.

Commercial products are all very well but nothing appeals to me like one I could build myself. With your experience to date I wonder if you have ideas for a self built tandoor which would last in the long term?

Hi Bob. I don't have any photos right now but perhaps next time I make some I can remember to take one. I was surprised to find how well they freeze and baking ahead of time leads to stress free dinners, as with just a few mins in the hot oven direct from the freezer while the meat is being carved is enough to both defrost and make them warm and crispy again.

Yorkshire puddings

Yield 24 small puds
110g all purpose flour or ideally bread flour
150g milk (or 120g milk + 30g water)
Half teaspoon salt
2 Eggs

Yield 12 small puds
55g bread flour
75g milk (or 60g milk + 15g water)
Quarter teaspoon salt
1 Egg


Method: sieve flour into a bowl, add salt. Add eggs and a third of the milk to the flour and whisk to combine. Add remaining milk and whisk again. Rest for 5 mins then whisk for 30 secs

Preheat oven to fan 220C / gas mark 8 10 mins and place half tsp beef dripping into each well of bun tray then put into oven for ten mins to heat. Give batter final whisk then add 1 dessertspoonful into each well and bake 9/10 mins at fan 200C/gas mark 7 (turn oven down after putting them in). Note, place insulating material such as oven glove on work surface to prevent bun tray cooling while you spoon mix into it.

When cooked they can be put into a freezer bag and frozen, then just place in a hot oven (fan 170C / gas mark 5) for 3 mins to reheat from frozen.
