I have a large Swan slow cooker that I use for winter soups and stews etc, but most recently for making bone broth. There are two problems with the slow cooker
1. It isn't very slow. The food is cooked through and falling apart way earlier than the recipes state. The heat seems too high and even on low heat the liquid seems to reach a low boil rather than a gentle simmer.
2. The lid doesn't seal very well. When making bone broth the fluid steams off very quickly and over a two day period the cooker has to be topped up three or four times. Tried sealing with foil etc without success.

So who has a slow cooker that gives a gentle simmer and has a tight fitting lid? What makes and models are the best out there?

Hi CT, it can be expensive like most of theses upmarket Indians, i.e. Cinnamon Club, Benares etc. But the food here has always been outstanding. It used to be cheaper to visit the lunch time buffet but it is years since I've done so. Mostly the evening visits are through work so it tends not to hurt my pocket ;D

We use most of the bones we accumulate for bone broth or stock and store in the freezer in 500ml mineral water bottles. East to thaw out and very convenient.

Thank you Phil. I just try to say it as I see it without upsetting anyone.

We are lucky to have the butchers in Chelmsford and the Asian spice shop in Braintree; but it all needs to be nurtured to maintain it or one day it will not be there.

There is a butchers shop under the multi-storey car park in Chelmsford town centre. The guys and gals there maintain a varied selection of meat that is sometimes hard to find elsewhere.

We have a deep steamer basket, like the one above, that fits all standard size saucepans and it will accommodate a small chicken.

The shooting season starts today and my first day out is next Saturday so more importantly the steamer will easily fit a pheasant or a brace of partridge.
