For me it greatly depends on the restaurant and how many sides you have. Even from the same restaurant portion sizes differ. Sometimes it would be enough for two, other times it wouldn't. Typically, I'll have one main, one rice and a naan.

I suppose it depends on what 'overnight' means - how many hours would that be. Also depends on the quantity being cooked, as you say. Not sure much would be gained from the extending the time when breaking down the veg. Extending the time for the final simmer, is another matter altogether, but I don't think this is what is meant by 'cooking overnight'.

I completely agree Solar and thought exactly the same when doing the Bombay group test.
I think the categories should be as follows:

Bloody hell that is a lot of people! 
I've made a double batch of a number bases (SNS, CA, Razor, Taz, etc) and they turned out fine. However, I've never gone beyond that, so wouldn't be able to advise on producing a 3x, 4x, etc. base.
