BIR Main Dishes Chat / Re: madras

hi adrian have you tried using butter ghee to cook this recipe. this can give a rich aroma and taste to the dish, providing you don't burn the ghee ie frying at too higher temperature. try this....

add 4 tbsp melted ghee to the preheated pan medium heat then add 1 tbsp of finely chopped onion fry for a couple of mins until the onions starts to soften then add 1 chefs pinch of fine chopped garlic fry until raw smell cooked out 20 secs max then add the salt 1 pinch, 1 1/2 tsp kashmiri chilli powder or to taste 1 tsp restaurant masala(curry powder mix) 1tbsp tomato paste (2/1 tom paste water) turn up the heat to high mix well the when you smell the spices release their aroma add the 1st ladle of base sauce mix well and then reduce then add 1 chefs pinch of methi and another ladle of base 1 tsp lemon juice mix well then add the precooked chicken. turn down the heat to medium and simmer until the sauce starts to thicken slightly (if it thickens too much just add a little more base) 1 minute from the end add a good pinch of fine choppped coriander mix in well, turn off the heat and serve garnished with some more coriander.

hi UB thought you might like to try this restaurant when your next in tenterden mate. last wednesday my wife had a foot op so after a long day did not want to cook so looked through the menus we had and for a change we decided to give Mouchak a try a quick 5 mile drive having already cooked some rice to save money, i ordered 2 chicken vindaloos, bombay aloo, chicken tikka starter, onion bhaji and a peshwari naan. i must say it was 1 of those meals that tasted so good you didn't want it to end, bloody fantastic. i know that 1 meal does not make a restaurant good but just try this 1. the restaurant is light and airy clean and well organised (computerised system. they did have a website but i tried the link and it did not work, shame!

hi donnie they do a square 1 too which i believe would be more suitable, but if i had to choose 1 it would be the orange 1 for stablility. it depends what you are going to use it for and where you are going to use it. jerry bought the 2.5 kw burner and then bore out to give himself about 8kw i think? i found another 1 on ebay from chaplebaits which they have it up for 39.99gbp
hope this helps

hi josh you could try to get in the kitchen and may be film your meal being cooked, or just watch it being cooked? it will inspire you plus the buzz is fantastic and your curry cooking will change for the better, or you may just be frustrated that you just cannot get that flavour aroma/taste. oh and lastly don't forget to buy some curry gravy and oil that way you could cook a meal with it as you are miles away from home   :'( or you could just enjoy the meal and have a great night out ;D

hi guys bought some shazans microcook chicken tikka yesterday in asda 5.97 for 700g which isn't bad. would have made my own but thought i'd try it but the time it takes to mix the ingredients together this can be cooked and eaten as you cook from frozen in about 4 minutes or until cooked through . it is halal meat and the list of ingredients are :-
chicken 85%
veg oil
tomato paste
garam masala
salt
chilli powder
turmeric
food colouring
msg
it tastes very good but does have a bit of kick not everybodies cup of T. but worth it for a shortcut instead of minimum 6 hours marination then cooking it and then making the final dish 10 mins you could have a curry cooked and on the table in 15 mins DONE! ;D
they also do sheek kebabs 15 long sausage like kebabs for 5.00gbp very good value for money  :o
