I did mention this somewhere else, but if you are using Celery seeds it is better to use the wild celery variety.  You can grow it in a pot (not the open ground as it grows like a weed) and collect the seeds.  The leaves look like French/Italian Parsley and are great for cooking, maybe even for the base.  You may find it in the hedgerows (if you live in the country that is) .

Andy, this is an old chestnut on the Forum.  What Spinach do you use and how to you pre-prepare it please.  We use frozen chpped Spinach which we blast in the Microwave, press/drain all the water out, and store in the fridge.  Some curry houses I know use tinned spinach puree or make their own puree.

I have tried them...and .... Yuuuuch, except for their Tikka paste and Kashmiri paste.  Ferns and Simtom are the best for me.  A lot of BIRs around the Midlands use Simtom I am told and a few down here seem to be moving that way.
