Pictures of Your Curries / Re: Chicken Jalfrezi
February 11, 2008, 10:21 PM
Hi UB,

Many thanks for trying my recipe.  I'm glad it worked out for you! ;D

It certainly looks very tasty from the pictures.

Your naan recipe is still on my list, but I haven't made any bread for a while, and with the work schedule for this week, I don't think I will for at least another week.  :'(

Cheers,

Hi ronnoc,

Well, you can count to three if you like.  I made this yesterday along with the cr0b2.  I'll post full details and pictures hopefully sometime in the week--will be a pretty mad week trying to pull a proposal together, so don't know how much time I'll have between now and then (painting again today... :().

Anyway, I love the smell of this base, but I wasn't too happy with the resulting curries.  I have a theory I want to try the next time I get a chance to cook that I think will make the difference.  When I've verified this yea or nay, I'll try and illustrate what I did to see if it helps anyone else (or if it doesn't work, if anyone else has any ideas too).

Sorry to keep you in limbo, but a bit wrecked at the moment.

Cheers,

Keep up the good work.

Cooking Equipment / Re: Hand blender?

I have both a Kenwood Chef/Major mounted blender and a half decent hand blender as well.

I feel exactly the oppposite way round to you! The Kenwood blender is a dream even if anything needs to be done in 2 or more baches. You can walk away and it blends anything in no time. I find the hand held blenders are more hit and miss, and simply not as effective - a real pain to faf around with.

Hi George,

Thanks for the observations.  I'm now the proud owner of a new Braun, stainless-steel hand blender critter that I intend to try out tomorrow or Sunday on both a batch of ronnoc's base as well as cr0b2.  Who knows, I may feel the same way after one or two tries with it! ;D  I hope not, but I do get what you're saying.  In fact, the effectiveness is one of the things that I'm most worried about.  Still, if you can do the whole pot in 5-10 min vs. 3 or 4 rounds of 1L at a time for 5 min with similar results, I'll be happy.  It has plenty of power (450W) and nice, new, sharp blades, so I'm pretty optimistic. ;D

Welcome to the forum!  Looking forward to hearing how you get on.

I think SnS's right.  Maybe it's time for a new career in the food industry?? ;D

Hi Norrie,

Welcome to cr0.  Do you have a particular base that you used before you joined the forum?

Hi CA,

I know I'm still sorta new at this stuff, but except for the time I re-boiled the Saffron base to see if that would help it after freezing, I didn't worry too much about the temperature of the base.  I'm sure, as Bobby says, it reduces the overall temperature of the pan (I did try to ensure it had been out of the fridge for a few min), but I haven't noticed any particularly ill effects to the end-result curries from adding it cold to cool.  Was mainly driven by lack of stove space and laziness on my part more than anything else.

Sounds good, Haldi.

Certainly worth a try too once I have some more base! ;D

Great work, gary!

I'll definitely need to try this one as well.  Thanks a million for posting, and what a buzz from the experience! ;D
