Dansak / Re: My Dhansak
May 24, 2015, 09:09 PM
just made this to spec... had no deggi mirch so used kashmiri powder instead.
All other ingredients and measures done exactly per the recipe.
found the use of a whole lime way over powering though. could probably use half.
chicken tikka dhansak... I polished it off but not sure if this is my thing

Curry Videos / Re: Chicken Tikka/Tandoori Marinade

the music wasn't too bad and the editing was well done.
That said, once I saw you add yogurt to the mixture I had to switch it off.
Yogurt - the destroyer of Tikka, some people may like it but the texture isn't right IMO.
A step backwards from blades recipe that I still use as my goto tikka marinade.

Rice (Plain, Pilau, Special, etc) / Re: pilau rice
April 23, 2015, 08:18 PM
Just done 10 portions of pilau myself.
bring a pot of water to the boil with
2 teaspoon salt
1 teaspoon turmeric
A piece of cassia
2 indian bay leaves
the juice of half a lemon
boil for a couple of mins and then remove the spices (put to one side)
Add rice (unwashed) and stir
continue to cook rice stirring gently and occasionally
After 8 mins remove from heat and drain
transfer to a large casserole dish, large patter or whatever you have and gently run a fork through the rice.
add ghee/butter or oil to a pan
add 2 cloves of garlic minced
1 teaspoon of cumin seeds
and the hard spices from earlier
and cook for a few mins until the garlic browns.
strain the oil through a sieve and pour over your rice.
Been doing pilau this way for a long time and it never fails.

Lets Talk Curry / Re: Making a curry with vegetable soup instead of base
March 18, 2015, 05:26 AM
Asda have Baxter's French onion soup on offer at 50p each.
Bought 3 tins of it to experiment with.
I'll post my results when I get round to making a base with it.
