Been chating to a bangladesh chef about his tandoor and his awesome smokey flavoured tikka, I told him i use a nipoori but cannot get the tikka as smokey as his, he went on to tell me not to use your common bbq charcoal but to use carbon monoxide free charcoal???, im a bit puzzled, is there such charcoal? surley anything that burns releases carbon monoxide, someone please enlighten me.

Also he mentioned something about his charcoal is part burnt or something like that, he was a bit hard to understand but seemed keen to help.

I've just bought some rajah BBQ seasoning from spices of india, it smells great, i intend to add this to my tikka marinade.

Done this base on saturday, i cooked on low for 3 hrs but still couldnt get that vinegary smell, i cooked a madras tonight and gotta say its the best curry i have cooked so far and probably better than some bir's, i was well happy.

I didnt use seasoned bhaji oil but i did use oil that i skim off from oily take away dishes and store in a pot in the freezer(only about 50ml), not sure if this made the difference.

Aslo used a tea spoon of mango chutney in the madras and this made a good difference to sweetness.

On the whole i think this is a good base sauce, i did sieve the sauce aswell and got a very good texture by blending for a very long time.

I have bought chinese chicken curry from a place around here and I swear its not chicken, it taste bland but not like chicken and the texture is completely different, its very grainy like beef but white, Hmmm I wonder what dog or rat meat tastes and looks like?

Just bought this myself and it looks fantastic, havent read all yet but i can see already its gunna improve my cooking, this book is more indepth than any book i currently have. Well done Julian, hope it sells well

Well since the UK goverment are going to put an increase of 40 pence per unit of alcohol on the price of booze i think its time for me to start brewing again, i feel sorry for the pubs around here they are all closing, 4 pound per pint!!!!  :-\
