Spices / Re: Frozen Ginger&Garlic.

I used frozen garlic ginger in my usual tikka marinade
It ruined it
The whole aroma was wrong
In fact the first batch I threw away, because I thought something was bad
I use frozen gg in frying and it's fine, but fresh is way better for marinades

Here's the recipe, do try it and tell me what you think.

A jug of oil
a string's length of cinnamon
a hamster's chuff of green cardamoms
A gnat's fart of asafoetida
Two monkey's buttocks' worth of red stuff
A scant whale's scrotum of chilli powder
Equal measures of coriander and cumin, about as much as will fit into the tyre tread of a bicycle wheel
Half An elizabeth II silver jubilee egg cup of some other stuff.
Throw it all in a pan and cook it for a bit.

::)

is this a scaled down version?

we're talking about scaling down, but at the top of his recipe he says

"Don't be put of by the amount of onions...It wont work otherwise"

Hi haldi, well i cook madras, mild chicken curry and saagwala. you may find by just addind a little more cucumber to the next base you will see more of a difference,
steve.
Hi Steve
I wanted to try Dave Loydens Undercover Curry base, again
So I made that this weekend and tried the rhogan josh again
It wasn't anywhere near as good as as the base made with cucumber
There are just too many recipes to try (I'm dead keen on the new Glasgow recipes)
I will make a base with cucumber again
I'll use a bit more
It definitely did no harm and quite probably made a worthwhile improvement

you are amazing
thanks so much for posting these
I have a lot of frozen base to use, before I can try your recipe
But I must admit that I'm thinking of binning the old, and trying yours soon
Do you precook vegetables or potatoes at your place?

A POT THAT WILL HOLD 7 kilo of onions
Hi Bigboaby
is this a full sized base or is it scaled down for us?

Sorry, if I've not understood this correctly, but how do you make a curry with this base?
I see the ingredients, but would like the method
Thanks
