Ah they both look great Bob.  I think part of it is those aluminum containers I associate with BIR. We get curry in plastic tubs here in the US and it's just not the same.

Hands down, in a curry or tikka, it's thigh for me. But my missis does a beautiful breaded chicken breast, pan fried, served with chopped tomatoes with a ton of garlic in them and it is absolutely wonderful. Not Indian, but just saying.

Just made this today.  Honestly can't remember where I got the recipe.

1 TBSP coriander seeds
1.5 tsp cumin seeds
Seeds from 1 black cardamom
Seeds from 5 green cardamom
2 Asian bay leaf
2" piece cinnamon
1/4 tsp fennel seeds
5 cloves
1 star anise
Piece nutmeg 1/4" x 1/4"
6 black peppercorns

I've done it pan roasting the spices, cooling before grinding and also just straight grind.
Works well for me.  Cooking with Taz base currently.

Well, my jalapeƱo plant is the gift that keeps on giving. It's taller than me and I honestly can't keep up.  Must be over 100 fruit picked so far.  I've left a good number on the plant till they turned red and they are killer hot.  So in a very productive day, Mrs. Robbo pickled a few for me and I made fresh garlic-ginger paste and a new small batch of garam masala.

I have to try this.  It's just intriguing and I'm always on the lookout for something new.  Mind you, I've made two curries this week with Taz base (both very good) and tonight doing Instant Pot biryani.  Heresy I know, and won't mention that to my friends in Hyderabad but in a pinch it's an OK rice dish to enjoy with homemade naan.

Luscious!  The only spice mixes I have made are the usual suspects of mix powder and garam masala.  I've often thought about trying my hand at a paste.  One for the future for sure.

I too am averse to shelling out on saffron, but Costco here in the US has very reasonably priced saffron in jars.  I rarely use it, mainly when we do paella, but certainly not ridiculous if the quantity in the recipe isn't over the top.
May be worth seeking out any offers in local cash and carry type places if you have them.

Hey Livo, glad to see the KH got booted. As to what it is, I think an empty vessel, devoid of humanity just about covers it. Utterly without worth.
