A few weeks ago having cooked up a batch of base to freeze I was left with about 250ml spare so I thought I'd knock up a quick treat for myself ... not having any defrosted chicken my thoughts turned to the larder ... the choice came down to corned beef curry or cocktail hot dog vindaloo ... the hot dog vindaloo got the vote and it wasn't too bad ( on a scale of 1 - 10 a 3 ! ).

Next time I'll make sure I have some real meat available on base day !!     :)

Welcome Darkginger .. I know first hand your problems in obtaining spices and so on , I'm in Slovakia and resort to trips back to UK too .. in fact I returned last Saturday from my latest trip with around 3kg of different spice plus 1kg of fresh coriander .. I also bought some seeds from the garden center so I can try to grow some coriander later in the year. It does add to the fun and makes my curry extra special knowing the effort that went into the ingredient sourcing !!    :)

I tried this yesterday but instead of chicken I used onion , garlic , aubergine , courgette , capsicum and tomato and it was really good .. we had it together with a biryani 

Once again hat off to CA !!      :)

As a previous poster suggested .. try CA's recipes first since they are particularly well written and simple and give outstanding results ( for me so far  :) ) ... there are other great ones too mind !!    ;)

Rich , that looks fabulous !!

I'm always short of ideas for that non-curry evening we all have to endure from time to time .. this looks worth a go .. nice pics too particularly the dripping cheese !!    :)

Hi petrolhead ,

Given the wealth of great vindaloo recipes on cr0 I'm baffled as to why you'd contemplate a tinned sauce .. a trip down memory lane maybe  :)

The first recipe I made from here was CA's vindaloo using his base and masala and it was wonderful .. why not give it a go ... you'll be very pleasantly surprised .. it's BIR !!   :)

If you can afford it go for the highest attainable temperature oven possible. At around 350 Celsius ovens self clean (so I'm led to believe by Miele )and you're getting near the temperatures in a tandoor or pizza oven which must be handy .... maybe   :-\
