Hi Emin-j

No I don't have a tandoor, I've not really made that many Naans before either. The recipe I'm using is one which I originally found on youtube and posted a link to the website. It also shows the written recipe. Here's the link to the thread.

It does call to use a pizza stone however so I bought one for a tenner in TK Maxx ;)

I follow the recipe exactly as written, I barely knead the dough and I've been adding Kalonji seeds to!!

Curryhell, around my neck of the woods they are normally on the back page of the T/A menu, under headings like sundries or sandwiches and only cost around ?3 to ?4. Well worth it!!! ;)

Evening all

Due to having conquered (IMO) the Naan bread, I thought I'd replicate another favourite Indian takeaway dish of mine - The kebab roll.

For those of you who haven't come across it, this version is a garlic naan with chicken tikka, seekh kebab and salad, topped with Chilli sauce, garlic mayo and mint yoghurt. Delish!!

My local T/A's include lamb as well but its a tad chewy so I don't normally go for that.

I don't really have a fixed recipe for the meat, the tikka is loosely based on dipuraja's but with added milk. the seekh's are similar to other recipe's but with what's in the cupboard at the time, but essentially lamb mince, mint, coriander, garlic, mixed powder etc.

Garlic mayo and chilli sauce from a bottle and lastly dipuraja's mint yoghurt.

Abdul's own website offer's one 2 one lessons from 25 quid for 1 hour. I don't know where he's based though :-\

In my opinion Fat duck, I wouldn't necessarily say unhealthy if the right ingredients are used. However generally lots of oil's used in the dishes which makes them very high in calories.

So if you use vegetable oil / sunflower oil, this is not necessarily bad for you but is high in calories. On the other hand if you choose a dish and make it with butter ghee, cream and sugar then its not only high in calories but also generally unhealthy.

IMO of course ;)

When I make tikka I normally add milk to the thin the yoghurt down as I don't like the mixture baked on either. Its a bit too bitter for me left on  :(

I managed to get mine from an asian grocers in Green Street, East Ham.  They actually sold many spices from Jalpur as well as from other suppliers.  Hopefully, this source will continue.  I think my current 175gm pack will keep me going for a while though ;D

Is it only you and I that managed to actually go and purchase this from a shop W??

I'm sure there are other members who have stayed silent CH. i got mine from near where i work which is about three quarters of an hour from home. The bloody car stunk of the stuff by the time i arrived home!!! Lol

Julians updated his blog on his website stating he's expecting his book to be ready end of Feb (ish), what he describes sounds like its gonna be right up my street.

Theres also an interesting mention about making his own GM, leaving in an airing cupboard for a week, then roasting on a really low light - dedication! I'll stick with the large box of jalpur for the time being although my spice cupboard stinks to high heaven with it's potency hehe :)
