Not convinced that 1.8kW would provide much by way of Maillard reaction unless one kept the size of each grilled item rather small ...

Although my experience is not as wide-spread as Robbo's, I too have experienced steamboats in a number of countries, including the UK (made by my wife's family), Singapore (professional) and elsewhere. And, like Robbo, I too have never had a bland experience. One of my favourite meals, in fact.

I now know where — Tchibo made them, termed (in English) "Hand Sealer", product number EN 292 085. No longer available, but significantly cheaper than the "musthaveideas" one when purchased.

I have seen one of those sealing devices somewhere before, but I'm not sure where — possibly in the hotel kitchen. But for myself, I prefer a vacuum sealer and continuous-form sealing bags which come on a roll. I have no idea how they compare for longevity (etc) with the "Musthaveidea" range, but they are infinitely cheaper and so cheap that they can be thrown away if they puncture (which none ever has for me).

Definitely concur with "Nepalese cuisine, [well] worth a try if you can get it". Some of the best BIR cuisine I have ever eaten has been from Nepalese restaurants, the last really memorable one being in Swanley (Kent). The one in St Austell (Cornwall) is OK, and the one in Truro (also Cornwall) probably better. The one in Babbacombe (Devon) was something of a disappointment.

To be honest, Jerry, I almost never bother. Since I add both garlic-infused oil and ginger-infused oil when cooking or re-heating a supermarket curry, I clearly think that "more is better" in this respect. I would need a layer of oil to a depth in excess of 1/8" before I would think it worthwhile to try to spoon some off.
