It's difficult to create this takeaway oil at home
Two takeaway places, that let me in their kitchens, just ladle off the oil from their cooked curry gravy into an large empty white tower tomato puree cans
So all the gunk drops to the bottom
They spoon off pure cooked oil from the top

Then when they make the next curry gravy, any remaining oil and the stuff at the bottom of the can, goes into the curry gravy pot
And you should smell this when they do
This , for me, is what makes takeaways taste and smell so wonderful

My wife, and one of my sons are vegetarian
So a lot of our food tends to be veggie fare
Last year my wife bought one of the Sainsbury's Cheapo BASIC range
She got a curry sauce
It was an impulse buy for about 70 pence
It sat in our cellar looking very unattractive for months
Then the other day, she bit the bullet and made a meal with it
She added some red lentils and quorn mince
Both days I had it, I actually paused to appreciate it's simple genius
I have had curries from a takeaway far worse than this

You know when you buy four curries, and there is one that's the least favourite?
Well that would be this fella
Not recommended but way better than you'd think

I normally mix up the spice mix to go with whoever's recipe it belongs to
But the other day I simply used East End's Mild Madras spice mix
And it was brilliant
For ,at least a little while, this will be my spicing of choice
