Good first hand info! Anita

I use curry leaves in my BIR cooking and often thought about
growing my own  tree, but not aware they were prone to bugs.

I grow a few kitchen herbs in the summer months and it is a treat
just to grab some of your home grown, when needed.

Fresh Coriander and Curry leaves are always available at my local
Asian Store and still quite cheap.

Just bought 40g of fresh curry leaves today. 1.29GBP.
Will give these a good wash, dry and freeze what I don

Probably at a guess less than 200ml in the whole dish.

Been redoing a few BIR starters lately, old and new.
This one always hits the spot, old is gold as they say!

How I cook BIR Chicken Chatt. (Starter)
An update to my 2012 video recipe

ChewyTikkas Chicken Chaat 2017

Basically Do a mini Bhuna

Heat 1.5 tbs veg oil
Sweat down a handful of Service Onions
with a pinch of salt and kasoori Methi - 2mins

A touch of G&G, cook out - 30secs

A touch of the usual,
1Tbs Tomato Puree dilute,
0.5 tsp Mixed powder,
0.5 tsp Kashmiri Chilli Powder
and 1level tsp of Chatt Masala. cook out - 30secs
with a splash of base gravy.

Add a handful small diced precooked Chicken pieces
combine and saute hard, keep adding splashs of base gravy - 1.30mins

Add a handful small diced Tomato and coriander, combine and saute ,
keep adding splashs of base gravy, singe-fry and deglaze - 2.00mins or until it all becomes semi/dry.

Serve on a Puri, garnish with cucumber, coriander and lemon.

Plain precooked chicken
Tikka or Tandoori can confuse the flavours a bit.
Nothing wrong in using it, but makes it a different dish.
