Hi Natterjak,

Have you tried chewey's 3 hour base ?
https://curry-recipes.co.uk/curry/index.php?topic=5606.0

I use 3k of ALDI onions, 1 very large green pepper
and less water, follow as per cheweys video.

I have also used 2 large Table spoons of Bassar mix (an emergency) instead
of spice mix with good results :-)

Anyway give it a try and let us know how you get on.
Its a mild curry on its own (Bassar mix version) you can pop a skinned chicken
in the base if you want, remove when cooked, but that's another story :)

Problems is...
Names (who posted what) threads with quotes with quotes etc
don't make sense anymore, cross posting. Someone said this and that
with more quotes, and now threads being renamed it's bonkers.

100 best balti curries can be found here.
its not the full book, and opens in word format
Ray has spent quite some time typing this up.

I am going to have to read the book again
and promise myself to give it a go sometime.

Hi,
The Undercover Curry book.

Page 44 his Palau rice seems to work very well.
I have been using this method for the last 6 months or so
and it works.
The only problem i have is how much milk to add (this is hit or miss)
the book does not make this clear, if you get it right it does work.

Hi Phil,

" If "1234" were not the proportions, what were they intended to represent ? "

I think chewy was meaning 1234 (instead of renaming tham again) as in his post as follows, hope this helps.

"The four main Whole Garam Spices used daily, both in a Bengali Home and Restaurant are 1.Tej Patta or Indian Bay Leaves, 2.Hari Elaichi or Green Cardamom, 3.Laung or Cloves, 4.Darchini or Cinnamon/Cassia Bark"

Hope this help.

Hi,
Yes your right the mayflower sauce is very good.
I use the mayflower hot sauce now.
I  looked into buying direct for 12 packs as the
hot sauce is hard to find, the postage is around ?10 min order :-(

I find the mayflower hot sauce very good for party's etc
but i some times add 1/8-1/4 tea spoon of five spice
esp near the use by date.

I precook all the ingredients onions, mushrooms etc
make the sauce then add the precooked ingredients back
into the sauce, job done :-)

Farmfoods dont seem to stock the hot sauce.

I have never done this myself but i thought
it was added toward the end to add that little
bit something extra.

I remember Bruce Edwards used this term long ago.
