Thanks Stew for your links.  I found this one there also.  It is interesting in that it uses ordinary self-raising flour rather than Atta flour to make these rotis.  They seem to be a cross between a Chapati and a Paratha technique wise, but sutable for home cooking I would say.

Hmm, I used to brew my own beer and never got it right so switched to wine.  I might also give home brew a go again if it has improved that much.  Thanks

Yes I did meet Mark, and we are going for a big bash with real time cooking/training/video in January sometime.  He has offered to come to our place to do it.  So I will get first hand info on how a real BIR operates and get some more recipes to boot.  However, one drawback is that Mark doesn't want to publicise unless it is for charity, neither does he want to reveal his proper name (I am not sure if I have said that the name Mark is an alias) because he is worried about possible consequences (I am sure you understand).  So be patient and I will get the basic gen here in the New Year, and I will try to get the video DVD for UNICEF off the ground also.

Welcome Spliffy.  I used to use Le Creuset and I totally agree.  Unfortunately they are too small for our needs.  Good point though.

Nice one Cory and would work very well for the home cook.  I am all in favour of documenting processes accurately as you know, so this will certainly help the Newbies and some of the oldbies too ;D
