Cooking Equipment / Knife Sharpeners

Ladies and gents,

Can you recommend a knife sharpener?

I have a set of Richardson Sabatier knives - though mostly just use the big one. It is now overdue sharpening and I'm a bit wary of fecking it up. I have, in the past, used a steel on cheaper knives (with varying success) and I'm not really qualified to do it on a stone.

Any experiences you have had would be appreciated.

Normally I prefer a curry with lots of sauce to soak up with bread but fancy a wee bhuna this weekend (only get the chance at weekends).

Can anyone recommend the ultimate bhuna recipe? (No commercial pastes please)

Thanks for the info Chewy.

The paneer in the fritters is grated and mixed with chopped shallots and green chilli with some spices. They are quite a pleasant change.
