Hi mate,

Any of the bases on this site can be used with CTM

Here's my recipe (which I sell on ebay): https://curry-recipes.co.uk/curry/index.php?topic=94.0. I must admit if I made CTM today I wouldnt use tomato soup but hey  ;D

I think ray had had success with the balti kitchen recipe aso which I think is posted somewhere on this site.

I suggest you pick a specific recipe and post for advice on it in that thread

I was talking to my BIR owner last week (about this site) and we got onto the subject of TD, I cant recall exactly what he said but I do remember him saying they fry dried garlic flakes in very hot oil, Ill ask him again when I get chance

Ive used this recipe a lot and when I double/quad the ingredients I always do same with the spices, I go easy on the garlic ginger puree though.

Also I substitute black cumin for the cumin (more aromatic)

Glad it worked for you mate (did you add the sugar, I think the sugar is essential now), I think the advantage of dishes like dhansak is they are more likely to turn out right because they are composed of many different flavours so if your base isn't quite right the dhansak can still be very good.

Compare that to say a vindaloo and you've very little room to maneuver if your base isn't quite right as the base makes up a large % of the final dish in terms of volume and flavour.

Hi mate, welcome on board

I think some of our members have tried the flaming pan (pete?) I tried it but could get it to catch properly (it did a bit), however I didnt have a shallow metal frying pan like they use in the BIR's, Ill get one and give the flaming pan a good going over
