Gently fry the onion until soft and golden brown
add the garlic and fry for around 2 minutes (don't burn it as it will taste bitter)
add the chopped tomatoes and cook for around 2-3 minutes
Meanwhile brown the mince in another pan then add this to the mixture
add the stock
add tomato puree. I usually use around 50 - 70 gramms
few dashes worcestershire sauce
add the basil and oregano
add the sugar
Salt
Ground black pepper

Now let it simmer for around 30 minutes, so that the mince is cooked thoroughly and the sauce has reduced into a lovely thick tomato consistency. Make sure you turn it every once in a while. :)

  Thanks for starting this thread,  I must have missed it.  Been after a good tomato sauce recipe for ages and this is good, thanks for posting 976bar its easy to do & very tasty.  The wife was well happy ;D

They look really nice curries Josh, the rice method looks like one to try for me and them naan breads look delicious.

Hi Domi,

I have a dvd player that does that,  I take it away with us when we go caravanning but cant be bothered putting them on disc at home.  the ps3 plays them really well over the wireless network but not sure if it upscales.  quality is really good tho on the 46" sony tv.

I own a PS3 & am currently playing Uncharted2 and also waiting for GranTurismo & F1 to be released.  Saying that I mostly use it for streaming xvids from my pc to watch on my tv.

Madras / Re: CA's Chicken Madras

Hi,

I used my last base on this last week whilst under the influence ;D cant remember how good or bad it was so today I made a new batch of CA's base and knocked up this Madras.  I found it very similar to my local BIR.  Very very nice CA thanks very much, it went down nice with a couple of cold beers ;)

The KTC bottled lemon "juice" not dressing, same thing me thinks (which I have seen used in a local TA) is available in Morrisons for around 50 pence here in Doncaster.

My favourite base is CAs, it seems to be the only base I don't get any bitterness in my curries.  Of course this could be down to my cooking improving as I still think I have a lot to learn.

the bulking up with water has been going on for a while in the UK.  I think it was a Dutch idea but I stand to be corrected.  Basically they tumble the chicken breasts in water till some is absorbed not sure of the amount. Usually this is the cheaper chicken available but I think it works great.
