Anyone know a reliable method to safely identify mushrooms? There seem to be risks involved in jumping to too many conclusions that these things are edible, when they could in fact be deadly. Is there a simple guide which may be followed or is it a case of committing to plenty of study before become confident in such matters.?

Great post JB. I'm sure there are many more examples of BIR dishes having a splash or two of good old British supermarket staples added, to pep them up. Although I've never seen a BIR recipe which uses HP sauce I've often wondered how widely it was used in the early days of BIR, when tamarind was hard to come by.

We appear to be at cross purposes. I've said nothing about Maggi sauces. My point is when people talk about sriracha they are talking about the original rooster brand product, not the one you appear to have tried.

It's a bit like ketchup - anything which isn't Heinz is a pale imitation, and buying a "no name brand" sriracha then dismissing it is a bit silly. Rooster brand is the only sriracha and anything else is just jumping on the bandwagon.
