Hi,
After joining here a little over a month ago I made the Zaal base (with some missing ingedients but with good results) and then this week made again with full ingredients (I would use a little less cinnamon in the base next time).
The second lot is a bit spicier as I used hot madras curry powder (my curries tend to be HOT!) I have experimented with CA's spice mix last month and am currently using Abduls 8 spice mix (as that is in my base) with good/ tasty results with both using a variation of 976bars madras recipe from Andy Rhodes e-book.

Just wondered what your all time fave Madras recipe is though as this week I want to try a couple of different ones and compare the flavours, cheers  :)

You are indeed correct Curryhell. My taste buds are well and truely (moderated)! At one point as well as the nandos extra hot sauce and kebab shop chilli sauce on nearly everything I was scoffing a halfpound of pickled Jalepenos a day. I only cut back as that equals 365 quid a year and thats a bit (moderated) steep tbh  :o
Garp, I would accept said challenge and I am sure I would win  ;D

OMG!!! I have to make this. I am obsessed with trying to find some real heat in my curries. I made some new base this week and did a spicy zaal version which when made into a madras my hubby said is too hot and he cant have madras again. WIMP!!!
I have had the leftovers tonight and added half a teaspoon of chilli flakes and got some warmth :)

Because I eat jalapeno's as snacks etc my taste buds are a bit messed up so I think as soon as I can source some scotch bonnets this chilli sauce will be  on the to do list :)

That looks delish Chewy. I made the Saag aloo again for my mum and dads friday night takeaway tonight and the usual Chicken madras and H4ppy naans (same for me and the hubby). Never thought of mixing them up though but thats a great idea. Lou x  :)
