Rice (Plain, Pilau, Special, etc) / Re: Towards a more aromatic pulao

The result was easily the best rice dish I have ever cooked. Could easily have come from T/A.
Do you mean Phil's rice could easily have come from a takeaway, whilst the tikka and biryani were not good enough to warrant a mention?

Lets Talk Curry / Re: The Elusive Adil's Balti

I haven't been to Adil's Birmingham for some time. I miss it. I would say in the past Adil's can/have made the finest authentic balti, period.
Thank you, also, for recommending Adil's. I am hoping to visit it in October, if the lockdown regulations are not tightened again.
I've only been to the Balti triangle once, if that's where it's located. Two years ago, I used google to find the rough area, walked around a bit, and then enjoyed a balti at Shababs on Ladypool Road. It wasn't bad but maybe Adil's is better.

I've got 30 ml of Royal Mughlai Meetha Attar sitting in my Amazon basket.
Did you ever try this and form a view on it's potential? I'd never heard of it before reading your post here but have now ordered some on amazon - expensive compared to kewra and rose waters. Thank you so much for bringing it to everyone's attention.

Pictures of Your Curries / Re: Syed's basic chicken curry and pilao rice

This was a perfect curry, probably the best I have ever achieved.
Again, this is so good to hear. Make sure it's well documented in terms of exactly what you did, so you can hopefully repeat it. But is it still not as good as the local BIR madras which you mentioned? Also, if you generally prefer madras type chili heat, can't you try turning it into a madras by adding extra fresh chili and/or chili powder? Maybe that could taste better than Syed's own madras!

I would say, with no false modesty, that today's "basic chicken curry" was about as good as one could get.
Good to hear. So what extra, or different flavours, are you looking for in a madras, beyond extra chili for greater heat? I note you weren't as keen on his madras recipe.

his name is Fusion inspired so take look I'll be interested what you think
He has 120K youtube subscribers, seems like a very pleasant chap and people writing comments seem to rate him highly. Some of his recipes may actually taste good but only as 'authentic' or traditional dishes cooked from scratch. So why does he often use words like "BIR Indian restaurant style"? They are not, apart from the fact he's standing in a BIR kitchen. My guess is that he's probably been successful in bringing extra guests to the restaurant. Assuming he's not in control, the owner probably gave him permission to film there, as long as he doesn't give away any restaurant secrets. In the Madras video he even says their mix powder is a secret.

it is clear that it is f****d
Phil - you accuse me of sniping but, in my opinion, you bring it on yourself. Why go out of your way to use a banned word by using four stars as a sort of workaround? You could have used a word like 'ruined' so where's the advantage of using a banned word? Especially as you are the current moderator. It really is quite shameful, lowering the tone of this forum. Unless you mean that type of damage was caused to the pan quite literally. If so, by whom? The mind boggles.

This is what I sent to Syed et al. (Extract from my Word document)
I hope Syed doesn't use it as the basis for a book or anything. In my opinion, your quantities are significantly different to what Syed used in the video. That's assuming these quantities are for the same size batch that he prepared. Phil's list of ingredients is also incorrect by the normal convention of using level spoon measures but at least Phil states the correct measures (rounded, heaped or whatever) under the method. If it was an exam question to write up what can be seen in the video, you would both fail!
