I think we all have a memory or memories of the best meal of our lives so far, where did you go and what was the meal?
Mine was a night out with family and friends about 10 years ago to an Italian restaurant called Sophia's in Wolverhampton, the whole event from entering and being seated, the environment, busy but relaxed, being able to see into the kitchen over the counter and watch the food prepared, the drinks, jd and ice for me, and then the food.
Table salads that were so fresh, with chick peas in and a simple dressing but you could quite happily have sat and ate nothing else all evening.
For me though it was the main courses, my family you see like to try everybodies food lol, we all dip a fork into each others plates and have a taste, comparing each others to our own.
It was all gorgeous, the lasagna, the spaghetti sauces, fresh pasta, garlic breads, even the friend of the families steak and chips(always one whinger who dont like galic pah).
But my meal, wow i can still taste it after all these years, Clam Carbonara, even typing this it makes my mouth water lol, it was amazing, i cant describe it it was that nice.
So thats mine what was yours?

Ive read somewhere that if you add salt to onions it stops them browning too, but it would be good for drawing out moisture i suppose, also it helps them soften faster when cooking.
Ive tried alsorts to speed up caremlising onions, nuking em in the microwave for a few mins helps, but it always ends up with a long slow affair in the frying pan.
Also if you add pepper to frying onions it makes them sweeter, strange i know.

I dont really get the pizza thing, its just spicey cheese on toast imo, ok occasionally, once or twice a year, ill get a bit of a pizza craving and go and buy one but it doesnt make me want to go out and do it all the time.
Same as Donkey kebabs, i dont see whats so incredible about them either, im the same with them as with pizza's ill maybe eat 1 or 2 a year, and i usually feel bunged up to hell for a few days afterwards.
Yeah niether are a cullinary marvel  in my oppinion.

Its once a week for me, traditionally its friday nights curry night for my family. Although i do go on a bit of a bender when i find a clonking good recipe lol. 10 curries in 14 days is my record.

Alloy wheels are the worst for it, they get like a verdigris around the nuts, also kwikfit and the like just love using morons who cant be arsed to use a torque wrench and instead just over tighten everything with an air gun.
Its like spark plugs 90% of people over tighten them too.

I know how you feel, a year ago my van got a punctured tyre, first thing in the morning i needed it for work and noticed it, " no problem ill change the wheel" jacked it up, undone the nuts and the wheel was rusted solid onto the hub, out comes the lump hammer and 2 hours of whacking and a can of wd40 the wheels still stuck.
Phoned the gaffer and he sends out the local tyre specialist who then helps me tag team the wheel with a heavier lump hammer and more wd40 for another half an hour, when it finally fell off.
Sometimes life sends us little tests lol.

Heres a tasty little recipe to use fresh tomatoes.
Chop some toms up, throw them in a frying pan along with a little oil and a pinch of salt and pepper and just fry them for 5 minutes until they are broken down and sticky.
Take  a slice of bread and dunk it in the tomatoes and eat it.
You'll be surprised at the sweetness that comes out of the toms, and also if you let the toms catch a bit and brown on the edges they get better still.

I was just reading my tv licence application form and noticed this part ill quote....
"TV equipment means television recieving equipment, such as a tv set, computer, mobile phone, games console, digital set top box or dvd/vhs recorder."
It also includes streamed over the net live or recorded tv programmes in or outside the uk.
Shocking really.

Im really intersted in all the cookery processes relating to curries, equally as interested in the spices and ingredients used, so interested that i cooked and ate 7 balti's in 8 days quite recently, and the answer i got from this was that, i had a couple of eureka moments, 2 of the 7 curries had everything i was looking for. The other 5 were just bloody good meals.
From this i deduced that if i cooked curries everyday, or worked as a curry chef in a restaurant i would with constant practice, be able to produce a wicked balti most of the time but occasionaly i would do something slightly different and the result wouldn't be as good.
The opposite if you will of what happens to me now, occasionally i make a bang on curry because i hit on the right techniques/heat and spices, and the rest of the time i miss something.
Ive reached the stage now that i know, whatever i do, the curry i produce will be bloody lovely either way. So ive given up looking, i simply cant cook and eat enough curries to become perfect, so will settle for enjoying the experience and being happier when i have a eureka moment.
