I use Fenugreek in a large amount of my recipes just as a habit i suppose.
The stock ..well i have found that extra flavor from the water you cook your chicken in makes a nice added taste to my own dishes, its all personal i suppose but hey it works for me & all my work mates ;D

ah, but sometimes going over old recipes & methods you pick something new, as you have moved on, your new knowledge can help you attain a better grasp of old information, do you not agree? 
I remember an old Chef saying, no matter how you progress you must remember" basics, basics", i tend to agree, you can go so far forward that you forget fundamental rules & all of a sudden you are floundering in your Curry cooking.I have done it & I'm sure many have.

In this link you will notice Star anise, it can also be added to any Rice dish but with caution as it can be a very overpowering Spice.
If you haven't used it before i would experiment with small amounts, but it is a nice addition to many curry dishes.
I have used them mainly in Vindalloo, Madras Curries & put one full seed Pod in Marinades.
