Well you know me, i only cook madras and i use the following recipe: -

MADRAS

Ingredients

  • Pre Cooked Chicken or Prawns etc
  • 2.5 Ladles Curry Sauce
  • 1 Tablespoon Chefs Spice Mix - SEE FAQ's
  • 1 Teaspoon Pataks Balti Paste
  • 3 Tablespoons Veg Oil
  • Pinch Dried Fenugreek
  • Chopped Coriander Leaf and Stalks (important the stalks)

Method


  • Heat Oil over highest flame
  • Add 1 Tablespoon of curry sauce
  • Add Spice Mix
  • Stir and shake for 30 seconds
  • Add a little more curry sauce
  • Add pre cooked chicken or prawns
  • cook for 1 min or so
  • Add curry sauce (2.5 ladles)
  • Add Balit Paste
  • Add fenugreek
  • cook over high heat for 6 minutes
  • Add coriander
  • Leave to cool a couple of mins, serve

what size laddle is used here, i find people use different laddles on this site and never know an ammount of base to use, is it important to the dot or not?

Hey bobby, im going to have a go at making this in the week, only ever made one other base before ( bruce's one ) i got slightly lost reading through this thread, would you say that if i stick to your orig first post this will give me a good base?

Im gonna have a go at this tomo, did everyone use the 150 ml ladles, im no sure on quantity of base to use.

One more question whilst your around, do you think this jalfrezi would work with the basic bruce base, i know it wouldnt be as good but ive got some ready made and really wanna have a good at this recipie tomo.?

Im finding this very confusing atm.

I have a recipe that says to use 3 ladles of sauce, its for a jalfrezi, now one of bruce edwards recipe's calls for 1 7oz laddle to be use's so i am confused to how bit laddles were used in the particular recipe.

Hey everyone, i have got a load of base left from making the bruce edwards one a few weeks back.

Im looking to do one of these two recipies tomo but have a few questions.

1. I want to use this recipe but with the bruce base, im sure it would work ok but dont know how much i should use, can any one recomend how much, here is the recipie.

What is meant by " Add ladle of base sauce and evaporate off" ???

3. Finally, when he refure's to at the start, heat base sauce , is that all of the 3 laddles full, then reserve after cooking chicken to add back later on.

I also dont know how much in sauce to use as it dosent state what size laddle is used and im not experienced enough to have a guess.?@?

Id be very gratefull if any one could help me on any of these questions.

How much exactly do you mean by " 2 person portion of 'Vindamoos Base' sauce" or is it to choice?

Im going to have a go at this recipie with a different base for now as i have a load in the freezer i need to use up.

Also at the start when you say add base sauce and cook chicken, is it all of the base sauce, then reserve after taking the chicken out to add back later?

I did the bruce base and curry last night and when cooking the main dish the oil didnt really seperate, what do i need to do to make this happen?

Well i blended it and it looked the same as eveyone elses.

I did use the paprika in the spice mix so im not sure why the colour wasnt red.

I made the curry last night and it was really good, all my family enjoyed it, a few things ill do better next time but thats the learning part i guess.

Only thing i found was the oil didnt really seperate when i cooked the main dish, what did i do wrong to not make this happen, just not cook it for long enough, or not enough heat maybe?
