"To my mind, cooking (at least repeatability in cooking) is a science and a process"

For McDonald's this may be true, they have perfected the science of ensuring that no matter which McDonald's you visit the food will be consistent and recognisable.

Take two people give them the same recipe and if they follow it to the letter you would assume that the end result would be identical.

I think that there are many other factors that would ensure that would not be true.

There is a skill/art in cooking something that comes with experience. I work in IT and understand your view that a recipe like a computer program should produce the same result if followed correctly, but sadly there are too many variables that cannot be written down.

McDonald's however have eradicated these variables much to the detriment of taste and quality.

But a Big Mac will always taste like a Big Mac even in Glasgow  :)

Watch out, bhut jolokia chillies are some of the hottest chillies in the world. I regularly buy dried jolokia from chilli pepper pete http://www.chillipepperpete.com/ here in the uk. But beware you will become addicted nothing else gives a burn like a bhut.

I cooked the curry2go madras with the tandoori powder in and for me it added something extra, something better. I don't think any cook in any place around this country does things the same way, some may use it some may not. To say that someone is wrong in its self is wrong.

If it works for you then use it.

Julian seems to have learnt many things, which must have taken a long time and a lot of patience. To have the guts/balls to set up an Indian takeaway as a non-Indian must have been very brave.

I've taken and learnt more from watching and listening to the Curry2go videos than I have from anything else.

Think about it, someone has done what secretly we all wish and strive for, and is doing it for a living.

Abdul is someone who has spent many many hours working all his life in Indian restaurants. He's obviously retired, what is the harm in him making some money for his skills, knowledge and experience.

I wasn't bothered about buying his book, until I saw Abdul posting here and offering so much for free.  So I spent a paltry sum of ?4 and bought it, and I will buy the next one too.

Here is a man with 30 years of experience and people have the cheek to criticize and moan.

I only have a hope that Abdul sees through the negative, and realizes there  are people on this forum (albeit ones that dont say much, like me) that welcome his presence.

This one looks better, good reviews, and easy to clean.

Interesting quote from the books contents.

"You?ll see others you?re quite familiar with, such as tomato puree, but don?t be fooled ? in British Indian restaurants, ?tomato puree? is much more than just tomato puree."

Sean, sorry I upset you, it wasn't intended. I wasn't slagging off the Jafflong, but saying how the food I got was nothing like what was shown in the videos you posted.

Your videos prompted me to try the place out again, I hadn't been there for a few years and the food looked good.

The bottom line is the food I got was not up to standard, this was the main reason I stopped using them some days the food was really good others it wasn't.

I'm willing to give it another go and maybe you can suggest the best day of the week when the good chef is in?

8 quid to watch them. Not worth it. I spent more than that for one of their curries and it was shit. Never again.

I know the guy that used to be a partner in the Jafflong, him and his father started it as a joint venture. They had some falling out and left to set up another place in town.

One of the waiters took over running the place.

Shame that someone is on these forums monitoring what goes on in order to protect some money making exploit/venture on another forum.

Sorry to Sean if that's not the case but it's how I see it.

where do you live in dartford and what night did you order the curry

i am the person who made the jafflong videos but they are on a rival site (im not going to promote the site you probally already know) im afraid now i have made the vids unable to see on the kitchen streaming site so hope you enjoyed it while you had chance

sean

I live off Westhill by the boys grammer school. It was a Tuesday night I ordered the curry. It certainly looked nothing like the videos you took.
