There was an article in one of Yesterday's papers (The Guardian, I think) which stated that under the new Freedom of Information Act, Trading Standard's Food Safety Reports of restaurants/takeaways, etc are now available to the public. You just need to contact your local authority.
Having been the recipient of more than one dodgy curry, this made interesting reading.

Adding some sugar will help balance any acidity. The few restaurant kormas I've tasted were quite sweet.

I often use a mix of 1 part ketchup/2 parts puree thinned down with a little water. I find this works well.

Yep, but not for a year or so. I seem to remember it being good - not too oily. If I eat out I tend to go to the Passage to India (Magdalen St) or the new one next door (can't remember the name), which is more authentic, but a bit pricier.

I've never used it curries, but have in other dishes - I reckon it tastes superior to normal stock cubes but not as good as proper stock. (As with Pete I got mine from Morrisons in Norfolk).

Are you sure the dessert spoon was salt and not sugar? For a single portion that quantity of salt seems extreme.

I reckon a takeaway/restaurant would have a high enough turn over that preground spices wouldn't have time to go stale (unlike most of us home cooks).
