Seriously I think I'll wait till we come out of lockdown and stock up with it, strange you never appreciate anything until it's gone do you?

Does anyone have a recipe for this sauce (or similar) We have completely run out and shop closed due to alterations and lockdown. It's the red sauce that goes with kebabs, chicken tikka and have looked high and low on these pages for a recipe but might just have missed it. Thanks in anticipation

Presuming I'd probably be the only person being served that particular dish at the time, how would you decide? Would you taste it yourself, and declare that yes, it was too salty or no, it wasn't salty enough for your taste so get out of my Establishment and don't darken my door again! Considering I've been going to Adils, Birmingham regularly from 1982 and been going to Goa for three months for the last twenty years, I think I know what's an acceptable curry.

Garp, you wouldn't have to ban me, I wouldn't have returned anyway but I'd certainly would have liked an edible meal to make the visit worthwhile. You do me an injustice to think that I would complain about a mediocre meal, I am talking about real failings here, would you prefer your Customers to just say nothing but just leave the meal and still pay for it?

Hi, yes I did Phil and found it really interesting and made me consider a few more pointers why these places were closing down too. I really believe a lot of the restaurants started to get too complacent and standards started to drop dramatically, where we live now there must be ten curry restaurants and to be honest there's not one that I'd say was good. The problem is a lot of people are willing to just go and pay through the nose for inferior food and service. The amount of times I have sent food back because it was bland, too salty, too sweet and have been met with total indifference as if it's the norm and the prices have risen dramatically too over the last couple of years so that's another nail in the coffin for this industry..

I was just looking down the restaurants that have been recommended and was amazed how far these went back, some were 2008 and wondered how many of these are still trading in 2020, I doubt if many are.  It appears that my old favourite that we have been using since the early 1980s, Adils in Sparkhill, Birmingham is no longer open since the lockdown, neither are many more from the Balti triangle, which used to be the central hub of Indian restaurants. So sad!

It's with some regret that I notice that our favourite balti restaurant Adil's in Birmingham is still closed and a sign on their page says 'Business closed until further notice' This comes at a time when I see other curry houses all opening up so has anyone got any information to why it's still closed?

Going back to the original post 'Has anyone else nailed a Madras?' With this lockdown and since I have been tuning in to Hari Gotras weekly 'Cook with me' on a Friday evening. I usually just watch and pick up the many tips that she throws in whilst cooking. I came across a recipe for her lamb Madras and tried it with chicken and it is far way better than any other I have cooked. She adds tamarind in and definitely nails my preference of a Madras. As it isn't a BIR recipe I just add a  small amount of  whatever base I have in the freezer and loads more chopped green chillies. Flicking through the Indian cooking videos on Youtube I came upon another restaurant chef posting his videos and I was quite impressed with the recipes, probably on par with the other two excellent chefs taking a break, British Ian and Latif, his name is  Fusion inspired so take  look I'll be interested what you think

Arrrr...............Adils! We haven't been there since before Christmas although it used to be our weekly Saturday night treat to spend a couple of hours there. A couple of days after Christmas we went off to Goa for three months and were caught up in the lockdown and were eventually evacuated by the British Government. Strange days we're living in. In the meantime we make do with my home made contributions but like you, yearn for that 'smell and taste of Adils and chat to Aftab.
