I must admit I am partial to the Cajun and Creole cuisine fell in love with it when I used to visit my aunt in Arkansas I know before anyone says it she lived 5 miles away from the Louisiana border , has anyone else tried cooking southern style ?

Regarding your question, many powdered spices will taste bitter, in their raw state.  The bitterness/rawness will (should) go when the spices are cooked.

fenugreek is used in quite of few flavourings including some of the so called  maple syrups  ;)

Sorry to dig this one up just mixed a batch I need to add the  fenugreek powder I will that in the morning as it is in my shed at the moment as I use it my bait making . I tasted the dry mix seems bitter is this right ?.
Hope to make my first base mix at weekend

I have noticed that a lot of recipes in the BIR style contains curry powder does anyone make their powder or is it mainly shop bought ? I am thinking of making my own while I have the spices to do it

Hi everyone I am glad I found this site and looking forward to try a lot of recipes I been recently making my curries from scratch grinding spices and so on but been following the more traditional way rather than the BIR methods didnt realise how split it can be but making interesting reading . I have seen a lot of recipes which I would like to try but the downer a quite a few call for coconut and coconut milk something I detest so is there anything I could use instead ? .I know I am going to enjoy this site  :)
