To be honest I love these places.  I wander around them like a kid in a sweetshop and could happily spend all day wandering around them.  They are wonderful places for curry fans.

Where a outs in Barking is this?  The only wholesalers that I know of that sell this stuff in London is at Brick lane.  Do you know of others?

BIR curryhouses most use aluminium frying pans (not non-stick) but carbon steel is also popular.  I have seen many using these

Thanks Chewy,  yes I meant to say Roshun not Roshney.  I notice some use chopped onion as in Bhunas and some leave it out.  I suppose it depends on the chef.

Does anyone know If there is a difference between Chicken Roshney and Garlic Chichen?  I know that Roshney means garlic in A certain language (can't remember which one) and it is known under other names and spelling but is it basically the same dish?

Secret Santa, why would Sam know about asafoetida as its not used in BIR cooking and probably not used in Bangladash either.  Its used in some parts of India for certain dishes but that's another country and different culture.  Btw i'm 47 and was born in 1965, if Sam is 45 then he could be born in 1957 and came here when he was a baby.
