I have a restaurant near me that was refurbished with an open view kitchen and with a very much modern take / new style Indian feel about it. The menu also includes many thing not usually found on a BIR menu. The old favourites are still available but this makes the menu quite sizable.

The problem with having such a large menu is much of it will have to be pre-cooked in order to be able to serve it when busy. This is quite a large restaurant too and despite it's fairly large open kitchen, sadly, you can clearly see dishes being microwaved!

Of course it begs the question as to why they have an open view kitchen when they are clearly microwaving dishes. How many I do not know but I never go there anymore.

What sort of restaurant did you own? I love food of all types and always looking to learn more. I am fortunate to a have good supply of Sussex Lamb, what kind of farm are you on?

Phil, I didn't mention supermarkets, just your regular BIR/TA I am sure there are exceptions.  ???

A heartfelt post and one I agree with, but lost on a curry community I am afeared. Curry generally or at least BIR, does not allow for delicate meat to take the stage. That is not to say that Indian influence can not be applied to good meat, just not to standard BIR fare, if you get my meaning. ;)

I haven't tried, but i'm sure you could make a flat version keeping in mind the points I made above. Having read back my comments, I am embarrassed at my dyslexic typing, it seems to be getting worse.  :-\

Aha, it's not duck its Dak and refers to the mail train in which the fish was transported. ;) Contrary to belief, it is not a banned substance in the UK. ;)
